Howdy,
I recently heard of a spray product made by Krylon that puts a matte coat on 
glass.  I think that I read about this in an article on building view 
cameras.  I did buy a can of the Krylon stuff at a home improvement center 
but haven't had a chance to try it out.  
I guess that I personally would only try to use this technique for 
"non-critical" applications as it sounds too good to be true (too easy!), but 
it could be good for a quickie solution.  Everything that I've heard of in my 
research points toward the grinding technique as the way to go.  
As far as the sharp edges on the glass is concerned, you can ask a glass shop 
to "swipe" the edges and that will give you a sort of bevel on the edges that 
will be easier to handle.  This will add to the expense so you might want to 
hang on till you perfect the surface of the glass before you have it "swiped".
